You will have to explictly provide MyAppleMenu with your e-mail address; MyAppleMenu is not able to retrieve this information automatically without you filling in a form. When you unsubscribe from MyAppleMenu's newsletter, your e-mail address will be erased, and is not archived.

MyAppleMenu will not share any information collected by MyAppleMenu to any third parties. MyAppleMenu is hosted on Pair.com, which, theoretically, can access all information collected by MyAppleMenu. However, as a professional hosting company, they will only do so in events of problems or emergencies.
